Herslev Bryghus(DK) - Wild Fermented Damson Plum; Blend of 3 barrels, 11%, 33cl
There is an old Damson plum tree in front of our brewery. Over several years, the fruit of the tree has been allowed to ferment with our wild-fermented hay beer on port wine and whiskey barrels. The first barrel was brewed in 2015, the next two in 2018. Later, the crows were added and have continued the wild fermentation on the dishes.
First barrel has clear whiskey notes. Second barrel has developed brettanomyces, and third barrel has a fatter fruitiness in the taste. Our blend of the 3 barels has created an orange and deep vinous taste experience with fully ripe plum in the aroma and clear tannins in the aftertaste.
Goes very well with dark chocolate.
