Danish Barrel-aged Indulgence Pack
This is a very special pack with 4 barrel aged bottles of Danish finest drink producers.
Let's start with the Wild Fermented Damson Plum: A blend of 3 barrels,11% from farm house brewery Herslev Bryghus.
There's a damson plum tree in front of the brewery and over the years we've picked the fruits and let them ferment with our hay beer in port and whisky barrels. The first barrel was filled in 2015, then we filled two more in 2018. Later, we've added the damson plums and the wild-fermentation in the barrels continued and developed. The first batch has clear notes of whiskey, the second has developed Brettanomyces and the third has a rich fruitiness.
Our blend of the 3 barrels is an orange and deeply vinous experience with an aroma of ripe plums and clear tannins in the aftertaste. Serve at 8-10C and allow it a few minutes in the glass before drinking. Perfect with creamy fish dishes or oysters.
This wine made 100% from the Stevnsbær cherry comes from their best oak casks, matured for a minimum of 30 months. Deep and intense in the nose, with a hint of chocolate and preserved cherries. For ox, pates, rich cheese, rich venison, duck or simply an untimely glass. Pro tip: once opened, store it in a cool and dark place and it will last for weeks!
Roxy is an old ale aged for three years on first and second use Bourbon barrels.
Before packaging, a soured barleywine was blended in for extra complexity and a touch of balancing acidity.
A dark tan head on an ebony body with chestnut highlights. The nose is dominated by sunbaked leather and toasted wood, followed by bourbon and macerated raisins. The flavour is at first drying but with warming alcohol and complex flavours of cocoa , caramelised figs, overripe blackberry and walnut.
Unpasteurized, unfiltered, and hand- bottled and numbered. Brewed, matured, blended by Jessica Andersen, that also is responsible for the lovely designs.
Fadbelagtig is an organic bourbon barrel-aged cider. Lambic nose, a bit of funk, complexity and fresh acidity. The dry cider from Holsteiner Cox has aged a year on a bourbon barrel. In the autumn 2019 it was blended with freshly pressed Arista adding depth but also freshness and fruit. Second fermentation on the bottle and disgorgement by hand.
